A friend of mine at my worship church called me last night to let me know they are planning a surprise 50th wedding anniversary celebration for the last Sunday of this month for a couple in the church. We always have a potluck luncheon on the last Sunday anyway so they are going to combine the two. They already have the cake part of it taken care of.
I've never been very good at what to take to these deals. I've actually taken dishes that no one ate or maybe just a few small spoons were taken out. I'm not the world's best cook I'll admit and maybe it's my presentation but I'd like to prepare something this time that would actually be eaten.
The food is always good but I think they need to have more salads and vegetables. There are usually lots of casseroles and desserts. Most of us need to watch what we eat. There are several people with diabetes and HBP.
Any ideas, suggestions, recipes?

I like to take a fruit salad - cut up strawberries, grapes, oranges, bananas or whatever fruit you like or that is in season. I coat them with a mixture of one tablespoon of honey and one tablespoon of lemon juice with a dash of cinnamon. I put in the sliced bananas right before serving. I started taking the fruit salad to the Advent suppers years ago and after that everyone expected me to bring that. The good thing about fruit salad is it is healthy and you can make it ahead of time and it does not require heating. Also it can be a dessert for those who cannot eat sweets.

Here's a very easy cole slaw recipe:
1 bag cole slaw mix (shredded cabbage and carrots) 1 cup mayonnaise 1/2 cup sugar 1/4 cup apple cider vinegar 1 can (7 ounce? a "tuna can" size can) crushed pineapple, drained
In a bowl, mix mayonnaise, sugar, and apple cider vinegar together with a wire whip until smooth. Add drained pineapple and combine thoroughly. Add cole slaw mix and toss to coat. Chill and serve (give it another toss just before serving).

Some times I take a "veggie Platter" I just fill up a huge tray with fresh veggie and fruit and add a cup or two of Dip. ( like low fat ranch) It always gets eaten quickly!

Make those ham and cream cheese pinwheels that your wrap up in torillas. They go super fast and are finger foods. They are my favorite. I have never made them, but I think all you do is take cream cheese and smear it on a tortilla, then place your ham on it then if you want you can put leave lettuce but that is optional. The lady that makes them at church put a green onion in the center of them. Yummy! I'll check to see if you should sprinkle any seasoning on the cream cheese, maybe garlic powder, but I don't know for sure.

One of our older members buys a fruit tray at the grocery store for every potluck. It is very popular and is easy for her (since she has arthritis pretty bad)

Hi, I haven't been here in a really long time. It's great to read about what's going on lately!
A really nice healthy salad that I make is to take couple of those bags of spring greens and baby spinach and dress it (at serving time) with Newman's oil and vinegar salad dressing (no sugar in there!); add some pecans and dried cranberries (they unfortunately have a little sugar, otherwise they would be inedible). Then top it all with a little crumbled blue cheese or feta cheese. This is so delicious and healthy. Most people like it.
