I don't believe this is authentic gumbo as I've never had it, but this recipe was in my Emeals and I love it.

1 can of black beans (drained & rinsed)
1 can of diced tomatoes
1 pkg frozen gumbo veggies (Pictsweet)
Rice
Cajun seasoning

Mix everything but rice in a crockpot and cook on low for 8 hours. Serve over cooked rice.

I couldn't find the gumbo veggies so used mixed veggies instead. I also browned some kielbasa and added after the veggies were done. I mixed in cooked, brown rice and Tony Roma's Creole Seasoning.

This is the way I make gumbo too and it's as good as the best I've ever had at a restaurant.  Quick and tasty.

I use Tony Chacherie (sp) gumbo. It comes in a box and is as good as any homemade I have ever made. I used to always make it homemade with the homemade roux and everything but Tony's is so good and much easier.
